Bonnie Raitt - I Can't Make You Love Me
The songwriters had Linda Ronstadt in mind for this one. Bette Midler was also considered, but Bonnie got the offer first.

Celine Dion - It's All Coming Back to Me Now
Jim Steinman originally wanted Bonnie Tyler to record the song for her 1988 album, however Bonnie's record label said no because they didn't want to have to pay Steinman (Desmond Child produced that album). Pandora's Box got it a year later and Celine got a hit with it in 1996.

Eve - Gotta Man
Swizz Beatz originally wrote the song for an intended collaboration with singer Aaliyah. However, according to him, their schedules and labels "didn't permit it". Swizz Beatz eventually collaborated with Eve for the song, stating that it "fit the vibe" of Let There Be Eve...Ruff Ryders' First Lady.

Surprised nobody has mentioned Zedd, Maren Morris, Grey - The Middle yet. Going off this Variety article a dozen of artists recorded for this, but both Demi Lovato and Camila Cabello explicity rejected it. Camila's version even had a planned release date of October 18, 2017 before she backed out last minute as Havana was smashing. Taylor Swift - Teardrops on My Guitar was pitched to the (Dixie) Chicks by her label in 2005. She even specially recorded a demo for the song where she replaces "Drew" with "you". Given how their next album turned out it's not a huge surprise they rejected it. The beat for fun. - We Are Young was originally made for Jay-Z and Kanye's Watch The Throne before producer Jeff Bhasker gave it to fun. It's unclear whether they actually recorded over the beat, but there's a leaked tracklist that includes this title. Jeff also claims that the song was sent to Rihanna (again) for Janelle Monáe's part.

The Beatles - The Long and Winding Road
Paul McCartney wrote the song for Tom Jones under the condition that it be his next single which the record label did not approve. He ended up keeping it for The Beatles.
Blondie - Call Me
Giorgio Moroder wanted to work on the song with Stevie Nicks, but she turned it down due to contractual issues.
John Denver - Take Me Home, Country Roads
Intended for Johnny Cash, but Denver heard the song first and insisted on recording it. It became his signature song.
