Both Lady Gaga and Pink recently released albums that can be considered side projects in genres different from what they're known for. Who are some other artists who have released an album, whether an entire collaborative album like Gaga and Pink, or a solo album, that was completely out of the blue for what they were known for? (we can leave holiday albums out)
Lady Gaga & Tony Bennett - Cheek To Cheek (jazz) Pink & Dallas Green - rose ave. (folk) Tori Amos - Night Of The Hunter (classical) Sondre Lerche - Duper Sessions (jazz)
This one could count maybe: Michelle Branch (in the Wreckers) - Stand Still, Look Pretty (country)

Chris Gaines is a great example too.
And in going with the lullabies theme, Jewel did two of those as well. I had thought about Jewel's country albums but I feel like those are more in line with where she was turning musically anyway, rather than just doing a side album of country tunes.

I'd say it continues on with her discography since it was released as a regular album for her, and not as a side project. Kind of like Taylor's 1989 probably wouldn't count as a side album even though it's (mostly) different from her country records.

Is Christmas music a genre? I always considered Holiday albums to be their own thing. They kinda count as a side project I guess, but not in the same vein as some of the things mentioned here because so many people do them.

Coeur de Pirate's side project soundtrack to the video game Child of Light. Sort of in the same vein as her own releases, but definitely with a more orchestral flare
Also her english cover album for the soundtrack to the TV show Trauma

Yeah Norah's had a lot of different projects in the last few years. Her first 3 were similar in concept and goal and then she just started experimenting around.
Katie Melua had that album she did with William Orbit as well that comes to mind.
Kelis' Flesh Tone also comes to mind.

Katie Melua's album (The Flood) was an interesting step but only a few songs were different enough from her usual. I was expecting more along the lines of the title track so I did expect more from that since The Flood was such an awesome sounding mix for her.
Jack White's many side projects are another example.
Zwan, Billy Corgan's one-time (?) thing.
Liam and/or Noel from Oasis have had a bunch.
Gnarls Barkley's two albums for both Cee-Lo Green and Danger Mouse. I think it was intended to be a one-time thing that ended up being a two-album dealie.
And with that in mind, the Gorillaz, who are coming back in 2015 with a new album.

Great catch with The Wreckers, Max. :)
Although, I'm not sure I'd be inclined to call their album a "side project" since all signs did point to them releasing a few more albums and continuing in the Country world before their falling out.
A few more examples:
Miranda Lambert- Pistol Annie's
Jennifer Nettles- Her solo album sounds like a side project until the fate of Sugarland is known

I'd personally put an asterisk next to Gorillaz, cause Blur dissolved between the first and second albums so that kinda became Damon Albarn's main musical outlet. Blur did regroup eventually, but they've yet to release a new project, while Gorillaz has since then.

Gwen Stefani - her solo projects have been pop and her band more ska Scott Wieland - 12 Bar Blues (and his Xmas album, even though they don't count) Pat Benatar had a blues album - I forget the name.

Celine Dion, Jewel and Nick Lachey have all done Children's albums.
Donny Osmond did a Broadway album.
Course any artist who does a "standards" album (Gloria Estefan, Annie Lennox more recently).
