I think, when it comes to signature song talk, charts can’t really accurately gauge it. Like for Michael Jackson, you are not alone was a bigger hit than thriller but I’m sure we would say thriller is more his signature track. Same for Beyoncé. If I were a boy was the bigger song but Halo would be considered closer to her signature I agree, but current stats would back up what you said. "Thriller" has over 180 streams on Spotify, while "YANA" has under 35 million. "Thriller" has nearly 600 million views on YouTube, while "YANA" has 179 million views. "Billie Jean" is tops at both Spotify and YT, though, and could easily be seen as his signature song. "Halo" is Beyonce's top song on Spotify and on YouTube.

Thriller having those stats don’t surprise me considering annual Halloween views and spins. Halo isn’t even my favorite Beyoncé song, not even top ten so I’m always shocked why people like it so much

Michael Jackson's signature songs are Thriller or Billie Jean. You can make a case for either one.

Queen. Bohemian Rhapsody seems to be their signature song but We Will Rock You and/or We Are The Champions are also signature in their own right. (Then again, Another One Bites The Dust is their signature to me.)

If I had to name a signature Beyonce song I'd have thought "Crazy In Love" or "Single Ladies"; and a collective honourable mention to the Lemonade album. "Halo" may have been a hit but didn't seem to me as replayed, iconic, or a relevant cultural presence as those others I mentioned. I'm kind of surprised it still seems so popular.

Some country examples:
Little Big Town - “Girl Crush” and “Pontoon”
Luke Combs - “When It Rains It Pours” and “Beautiful Crazy” (still only on his second era so he may have one that is bigger than either of these, or time will prove one of these to be more well remembered than the other.)
Kenny Chesney - “Summertime”, “When The Sun Goes Down”, and “No Shoes, No Shirt, No Problem”

You could make an argument for both "rockstar" and "Circles" being worthy as Post Malone's signature songs.

I would say Carrie Underwood with Before He Cheats and Jesus Take The Wheel hers is easily Before He Cheats I don't know, maybe it's different in other regions of the world, but the frequency at which I hear or see people reference JTTW is equal to or greater than BHC.

Jesus The The Wheel has a far greater cultural impact than Before He Cheats, but it transcends either Carrie or the song itself. Purely from a song point of view it's definitely Before he Cheats.
