I think it would've been more fun to break them down a bit more than these broad categories, so I guess strings is what I'll vote for. This is my top 3:

Of the instruments stated here, I'd say sax. I agree with back2blk about the cello; I can just think of more songs I love with a sax, probably because the cello is rarely highlighted. I also love the sitar, jaw harp, and fiddle. I wish they were all used in more songs.

It really depends on the genre. For R&B and hip-hop, I love drums and guitars (electric or acoustic).
In folk songs, itβs all about how guitars are mixed. I also love the cello and upright bass in these.
I love piano in rock songs.
Overall, I really love the B3 Hammond organ in songs with a southern sound to them. In the late 90s and early 2000s, some pop/rock songs had this and it was glorious.

There is nothing like a well-placed, well-played Oboe or English Horn solo. It's rare in Pop music but is one of the many reasons I love Madonna's "Crazy For You" so much. Faith Hill's "You're Still Here" is rife with this, and it's so beautiful. One of my favorites from Cry for this instrument alone. I'm an absolute sucker for saxophone, as I played it for seven years in the middle and high school band...that, and piano and strings (not to mention the obvious ones as a country fan--fiddle, dobro, and the like) will get me every time.
