While you all are talking country, there's "If I Die Young" (the Band Perry), "This Kiss" (Faith Hill), and "You're Still the One", "Man I Feel Like a Woman", and "That Don't Impress Me Much" (all Shania Twain, though the songs themselves really sound more pop than country, moreso after they got pop mixes.)
"Ho Hey" (the Lumineers) and "I Will Wait" (Mumford & Sons) were really folk to pop crossovers; the same might be said for Ed Sheeran's "The A Team" and "Lego House", though not so much his most recent hits.
