I want to say it's Fallin', because I remember that receiving the most hype when it was released, but the song I hear around the most is No One. Easily. IIAGY is also still a karaoke standard for better or worse.
I guess it's some kind of combo of the first 3. Maybe a slight lead for Fallin, maybe. But all 3 have stuck around. If you play either of those, people instantly know who it is and the specific song.

Fallin' is considered her signature song, but damn If I Ain't Got You is freaking iconic. Everyone knows the lyrics.

"No One" is her signature song. "Fallin" and "If I Ain't Got You" are both acceptable answers though.

"No One", "IIAGY", and Fallin' combined together. Personally, I think Alicia may think "No One" is her signature though.
I hear IIAGY the most of all in stores. Hell I hear a good bit of her singles in any store I shopped
And "Girl on Fire" is quite popular in the Pop world. I still hear it a lot too.
