To say that superstar Carrie Underwood has a lot on her plate might qualify as the understatement of the year. In addition to launching her "Play On" tour on March 11 in Reading, Pa., she's also getting married to fiance Mike Fisher later this year and trying her hand at acting, both on television and in a movie. As if that weren't enough, she's lent her name and time to an animal adoption initiative and tapped into America's collective pride by nailing the National Anthem at the Super Bowl.

We recently caught up with Carrie and asked her a few questions we solicited from fans via Country Weekly's Twitter feed.

CW: We've received e-mails from around the world, including one from China, and many of them focus on one thing— will you tour internationally?

Carrie: That would be wonderful. There’s nothing concrete right now as far as going outside of the U.S., but we always talk about it, and I think we’re just kind of waiting until the demand is really there. I’m super busy right now as it is just working in the U.S. and Canada, so it would really just depend on what it was and what the opportunities were. But that’s always been something we’ve definitely been open to.

CW: Will you and Mike have a small wedding or a big wedding?

Carrie: It's shaping up to be a good size. We would both like a small wedding, but the place that we're going to have it at, we have a lot of space there and we might as well just go for broke and invite everyone we know.

Coccadotts Cake Shop in Colonie has been commissioned to make a birthday cake for Carrie Underwood, whose 27th birthday was Wednesday.

Owner Rachel Cocca-Dott says the singer's management was referred to her shop by Danker Florist in Albany, which is providing flowers for the concert and has worked with Coccadotts before. The cake being made for Underwood is a chocolate with butter-cream frosting. This is the second celebrity cake done by Coccadotts; the first was commissioned by Donald Trump for a business associate and was sprayed in 24-karat gold, Cocca-Dott says.

^Oh my gosh that is the birthday cake I ordered for Carrie for Friday, from all of us fans! lol I hope Carrie doesn't read the paper as the surprise factor will be over. lol I guess they were really excited to be baking for Carrie! lol I ordered a simple little cake as I figured she already had plenty of cake for her BDay and might be sick of it, but they called me up and made it really special, for no extra charge, because it was Carrie! lol Very cool.

^^ Bummer that Carrie still doesn't seem to have anything concrete about touring in Australia, etc. I guess Simon Fuller jumped the gun in that article then. I am very surprised that they don't seem to care about it much. Of course there is a demand for Carrie in Australia at least, maybe the UK too. Other lesser known country artists have gone there that are not even half as popular as Carrie.

"There were sick people all over that show. I was sick. When Carrie would cough, it sounded like a heavy smoker, that breaking-up-in-the-chest thing.

"We went into rehearsal, and I knew how sick she was. The verses are OK, they're not that hard to sing. But, man, you get into the chorus of 'I Told You So,' you stretch. So she went into that chorus and just nailed it. So in the rehearsal, I looked over at her like, 'You ain't right. That just ain't right.'

I'm on the disappointed bandwagon if indeed UI is released. However, I'm just not buying that it is the next single no matter what Sirius Radio says. Arista has always kept things under wraps so I don't think this time would be an exception. TH hasn't even peaked yet so why would they announce another?

I cannot believe Carrie was sick during the ITYS performance. She was flawless on Idol. Absolutely flawless. Wow.

I'm sure they made it seem like that, lmao. Or, T could have lied and said she was management to make sure the cake arrived on time. I've seen crazier things - hell, my MOM ordered a custom made picture frame that says Carrie Underwood and top and Mike Fisher on the bottom to send to Carrie as a wedding gift. Keep in mind, this is my MOM.

Very nice Q&A read in the latest CW. Maddkat posted it at the FC. She talks about perhaps maybe following up this tour with an unplugged all acoustic one, keys off about not really into produtioin shows and would rather stand there and sing (per Dudley) but she understands the business and the need to make it worth the price of the ticket.

I didn't even notice the "management" part. LMAO I said "fanclub" not management. Hopefully they didn't mess up the card as I had them read it back to me and it seemed fine. I really want the card to say Fanclub, because otherwise, Carrie will just think this is all from her management team.

Unless they intentionally put management to make it sound better in the paper for the free publicity for the flower shop and bakery? The florist called me and said the order was in the paper, clearly for the free publicity of baking Carrie's cake and making her flowers. lol But they seemed really excited to be in charge of Carrie's flowers, etc. In fact, I paid for a small simple cake as I figured Carrie might not even eat it, but then they made it really fancy and bigger, on their own tab, because it was for Carrie, which I thought was cool. They didn't charge me for the extra size or fancy tiers or whatever they did.

Maybe there are 2 orders, because I said Fanclub twice, and they read the card back to me.

A Who's Who of country music's top performers have been added to the list of entertainers taking part in CBS' upcoming "Brooks & Dunn -- The Last Rodeo" concert.
