Baby Got Back is iconic though Baby got back only really got more popular though because of nickis atrocious disaster of a song called anaconda. Just for clarity, how old were you in the early 90s?

Peaked at #61 in 2004. It seemed so much bigger during the past 3 1/2 years, but I don't know why.

some modern examples off the top of my head:
One Last Time by Ariana Grande • heightened in popularity due to the unfortunate terrorist attack at her show in Manchester All Too Well by Taylor Swift • grew in popularity through rave reviews and fanfare, was relatively unknown in 2012 Roman Holiday by Nicki Minaj • this song became a twitter staple in the past year or so. some other Nicki songs can be put here as well ('Good Form', namely).

I think some of you have a skewed view because you're judging just based on chart position. American Idiot's digital downloads weren't counted for the Hot 100 when it was charting, which is why it peaked at 61 in the US. It would have been minimum top 5 otherwise. The album sold 3.5 million copies in the US in its first 4 months. That single and the album were massive. It has absolutely not gotten bigger since then...

I agree with the poster who said Criminal and Toxic for Britney -- Criminal has become the Defacto single from the Femme Fatale era despite it peaking in the 50's during its initial chart-run. It out streams all of the other Femme Fatale tracks and has gone viral a few times due to the songs subject matter.
Toxic is nearly the sole reason In The Zone has over 1 billion streams on Spotify, and it continues to gain 500k-600k streams pretty regularly. It's arguably more popular now than it was in March of 2004 when it topped Top 40 for 4 weeks. The way it performs today you'd have thought it was a 10-week #1 hit.
I would also second Mariah Carey's All I Want For Christmas Is You -- definitely bigger now, and continues to be every Christmas season going forward, than it ever was when it launched back in 1994.

Fleetwood Mac's "Everywhere" was a decent but not huge hit in 1987-88, peaking at #14. Now it ranks at #3 among their hits on Spotify, along with longer acknowledged classics like Rhiannon, Landslide, and the Rumours songs. ("Little Lies", also from Tango In the Night, also ranks in their top 10 most popular; is this Tusk and Mirage erasure?)
It's been helped by use in at least two major commercial campaigns in the last six months; tonight I saw multiple plays of a Kohl's commercial using it.
